1 tbsp olive oil
1 lb boneless, skinless chicken breasts, cut into 1/2 inch diced
1 small can Mexican-style corn, drained
1 (14 1/2 oz) can diced tomatoes, drained
Salt and pepper
1/2 lb wagon wheel pasta, cooked al dente
Shredded Monterey jack cheese

Heat oil in skillet. Add chicken and sauté until cooked through and golden, about 7 minutes. Add the corn and tomatoes; simmer 5 minutes. Season with salt and pepper. Combine with pasta and garnish with cheese. Serves 4
