MUSHROOM SAUCE

2 cups sliced mushrooms
1/4 cup butter
1 tbsp butter
1 tbsp minced shallots
1/2 cup chopped mushrooms
1/2 tsp dried thyme
1 bay leaf
1/4 cup red wine
2 cups beef broth
1 tbsp cornstarch
Garlic powder, salt and pepper, to taste
Saute sliced mushrooms in 1/4 cup butter until soft. Remove from pan and set aside.
To pan, melt remaining butter and add shallots; saute until transluscent. Add chopped mushrroms and cook until soft. Add thyme, bay leaf and wine. Continue to cook until reduced.
In a small bowl, dissolve cornstarch in 1/4 cup cold beef broth. Stir in remaining broth into sauce and bring to a boil. Whisk in cornstarch mixture and stir until thick. Add reserved mushrooms. Season to taste.
