DOUBLE STUFFED BAKED POTATOES WITH CHEESE AND BACON

4 large baking potatoes
4 tbsp. olive oil
1 cup sharp cheddar cheese, finely grated
½ cup sour cream
4 slices smoked bacon, cooked until crisp and crumbled
2 scallions, minced
½ - 1 tsp hot sauce
Wash potatoes, dry off and rub potato skins with olive oil. Bake in the oven at 400 for 1 hour. Allow to cool slightly. Cut in half lengthwise. Carefully scoop the potato out of each half to within ¼” of skin, placing skins in a baking dish.
In a bowl, combine inside of potatoes, and remaining ingredients. Place shells in a baking dish and mound cheese mixture in them. Bake until cheese is melted, about 15 minutes. Serves
