* BACON GARLIC MASHED POTATOES *

3 lbs. russet potatoes, peeled and halved
½ cup bacon, cooked and crumbled
2 tsp garlic, minced
5 tbsp. heavy whipping cream
¼ cup unsalted butter and chopped chives
Salt and pepper, to taste
1 cup Fontina cheese, shredded

Place the potatoes in a large saucepan, cover with cold water and bring to a boil. Reduce heat to simmer and cook for 20-25 minutes or until tender. Drain potatoes and return to the saucepan. Shake over medium heat about 10-15 seconds to remove the excess moisture. Mash the potatoes in the pan.

In a small saucepan over medium heat, combine garlic, cream, and butter. Heat through just until the butter has melted. Pour the mixture into the potatoes. Add remaining ingredients except and mix until smooth and creamy. Top with Fontina cheese. Serve. Serves 6
