ANGEL HAIR POMODORI

1 lb angel hair pasta, cooked al dente, drained
2 tbsp olive oil
1 tbsp chopped garlic
1 cup Roma or plum tomatoes, diced
1 tbsp basil
1 tsp red pepper, crushed
1 tbsp shallots, diced
Optional addins: Sauteed chicken, mushrooms, onion, asparagus, zucchini or broccoli
Grated parmesan cheese

Saute shallots, garlic and tomatoes in olive oil. Add crushed pepper. Toss in cooked pasta and basil, as well as any optional add-ins. Serve with cheese.
