1 lb lean ground beef
1/4 cup chopped green pepper and onion
3/4 tsp Janes Krazy Mixed-Up Salt
3/4 cup barbecue sauce
3/4 cup tomatoes, without skin or seeds, chopped in small pieces (one large or 2 medium)
50 to 55 Tostitos Scoops corn chips
2 cups shredded pizza cheese blend (mozzarella and cheddar)
1 (2.8 oz) can french-fried onions
In small skillet, brown the beef with the green pepper and onion; season with the salt blend. Drain meat. Return to skillet with the barbecue sauce and tomatoes and simmer 4-5 minutes until tomatoes are cooked but still visible, stirring frequently.
Place corn chips on air-bake cookie sheet lined with parchment paper. Place about 1/2 tsp cheese in each chip. Spoon 1/2 tbsp barbecued meat over the cheese. (A small dipper or melon ball scoop works well to measure the meat.)
Place scant tsp of fried onions on top of the meat, pressing in slightly. Place 1 tsp cheese on top. Bake at 375 until cheese is melted and slightly brown, 8-10 minutes. Serve as appetizer while hot. Makes 50-55 bites.
