APPLE BOURBON CAKE

4 Granny Smith apples, peeled and coarsely chopped
1 cup golden raisins
6 tbsp bourbon
2 cups sugar, divided
2 eggs
1/2 cup oil
2 cups flour
1 tsp ground cinnamon
2 tsp baking soda
1 tsp salt
1 cup chopped pecans or walnuts
Preheat oven to 325. Place apples and raisins in a bowl and sprinkle with bourbon. In a separate, large bowl, beat sugar and eggs. In another bowl whisk together the flour, cinnamon, soda and salt. Add oil to flour mixture; add this to egg mixture. This is a very stiff batter. Combine with apple mixture and add nuts. Pour batter into a greased and floured 13x9-inch or Bundt pan. Bake at 325 for 1 hour.
NOTE: If you would like a glaze, use 2-3 tbsp (or until desired consistency is reached) apple juice or cider combined with 1-2 cups powdered sugar.
