LIME AND COCONUT SANDWICH COOKIES

1/2 cup butter
1 1/2 cups sugar
2 large eggs
3 cups flour
Grated rind from 2 limes
4 tbsp fresh lime juice

Filling (recipe follows)

Preheat oven to 350. Prepare 2 baking sheets by spraying with cooking spray or lining with parchment paper.

In a mixing bowl, beat together butter and sugar until light and fluffy. Beat in the eggs, flour, lime zest and lime juice.

Place 12 equal-size spoonfuls of mixture onto each baking sheet, allowing 3 inches all around for spreading. Flatten mounds with the back of a spoon or the bottom of a glass dipped in sugar. Bake 12 to 14 minutes, until golden on the bottom. (Do not over bake; they should be soft.) Remove from oven and allow to cool. Sandwich the cookies together with the filling. Makes 14 cookies.

Filling: In a bowl, beat together 1/2 cup unsalted butter and 1 cup powdered sugar until smooth. Stir in 1 tbsp grated lime zest and 2 tbsp fresh lime juice. Fold in 1 cup flaked sweetened coconut.
