TERIYAKI SAUCE for chicken wings.

2 scallions, white part only (3-inch length), smashed
1-inch piece ginger, peeled and crushed
1 clove garlic, smashed
2 cups mirin (rice wine)
1 cup light soy sauce
1 1/2 to 2 tbsp sugar

Combine the scallions, ginger and garlic in a small saucepan. Add mirin, soy sauce and 1 1/2 tbsp sugar and bring to a boil over high heat. Reduce heat, and simmer over medium-low heat for 20 minutes, or until sauce has thickened and is reduced by half. Taste and balance flavors as needed.
