HONOLULU CHICKEN

3 to 4 skinless, boneless chicken breasts
1 (10 oz) jar peach preserves
1/2 cup barbecue sauce
1 onion, chopped
2 tbsp soy sauce
1 (6 oz) can water chestnuts (sliced/drained)
1 green pepper, julienne sliced

Hot cooked rice

Place chicken pieces in a 13x9 baking dish and sprinkle with salt and pepper (I didn't add S & P). Combine preserves, BBQ sauce, onion and soy sauce and pour over chicken. Cover and bake in 325 oven approximately 1-1/2 hours, basting occasionally. Add water chestnuts and green pepper slices for the final 15 minutes. Serve over hot cooked rice.
