1 lb new potatoes
4 tbsp olive oil
1 tbsp wine vinegar
2 clove garlic, minced
1 small red bell pepper, chopped
1 tbsp chives, chopped
Salt and pepper, to taste

Scrape potatoes. Cook until tender, do not overcook or they will break up. Mix together oil and vinegar. Toss the potatoes in the mixture while still hot. Stir in garlic and red pepper. Sprinkle with chopped chives. Season with salt and pepper. Serve while still warm.
