Farmhouse Apple Bread

3 eggs, beaten
2 cups sugar
1 cup oil
1 tablespoon vanilla extract
3 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
three or four apples, cored, peeled and chopped
1 cup chopped pecans

Mix eggs, sugar, oil and vanilla until well mixed; set aside. Mix flour, baking soda and cinnamon in another bowl; stir into egg mixture. Fold in apples and pecans. Divide equally between two greased and floured 9 x 5" loaf pans. Bake at 325° for one hour and 10 minutes. Makes two loaves.
