Because the banana will start to discolor pretty quickly, this salad should be served as soon as it is ready.

1 tbsp grated lime zest
1 tbsp dark rum (optional)
2 - 4 tbsp recipe Simple Syrup (recipe follows)
1/2 small ripe pineapple , peeled, cored, and cut into 1-inch chunks
2 medium ripe papayas , halved, peeled, and seeded, flesh cut into 1-inch chunks
2 large ripe bananas , peeled and cut into 1/4-inch-thick rounds

Mix zest, rum, and syrup in small bowl and let sit 10 minutes. Layer pineapple, papaya, and banana in serving bowl. Drizzle with syrup. Toss and serve.

Serves 4 to 6


Simple Syrup for Fruit Salad
Makes about 3/4 cup--enough to dress 3 to 6 salads

Simple syrup keeps well in the refrigerator for up to 2 months.

1/2 cup sugar
1/4 cup water

Bring sugar and water to simmer in small saucepan over medium heat and cook until sugar dissolves, about 3 minutes. Transfer syrup to airtight container and refrigerate until needed.
