CHICKEN STROMBOLI

1 lb boneless, skinless chicken breasts
1/2 tsp salt
1/4 tsp pepper
2 tsp oil
2 cups shredded mozzarella cheese
1 (28 oz) jar spaghetti sauce, divided
2 tbsp grated parmesan cheese
1 tbsp finely chopped fresh parsley
1 lb thawed frozen bread dough
Preheat oven to 400. Season chicken with salt and pepper. In a skillet, heat oil and brown meat. Remove from skillet and cool; pull into large shreds. In a medium bowl, combine chicken, cheese, 1/2 cup spaghetti sauce, cheese and parsley; set aside.
On a greased jelly-roll pan, press dough to for a 12x10 inch rectangle. Arrange chicken mixture down center of dough. Cover filling bringing one long side into center, then overlap with the other long side; pinch seam to seal. Fold in ends and pinch to seal. Arrange on pan, seam-side down. Gently press sides to form a loaf. Bake 35 minutes or until dough is cooked and golden. Cut into slices. Heat remaining sauce and serve with Stromboli.
