CARAMELIZED ONIONS I

2 tbsp butter
1 tbsp vegetable oil
2 lb onions, halved, sliced
1/4 tsp salt
1/8 tsp freshly ground pepper
1/4 tsp sugar
3 tbsp balsamic vinegar

Melt butter in large skillet over medium heat. Add oil and onions; stir to coat onions with butter mixture. Cover; cook 5 minutes or until onions begin to wilt.

Uncover; stir in salt, pepper and sugar. Cook over medium to medium-low heat 8 to 10 minutes or until onions are golden brown, stirring occasionally.

Add vinegar; stir to scrape up browned bits from bottom of pan. Serve warm. (Onions can be made up to 2 days ahead; cover and refrigerate.)
