RED CABBAGE SLAW WITH ITALIAN-STYLE DRESSING

1/2 medium head red cabbage, shredded (about 6 cups)
1 red bell pepper, seeded and sliced thin
1/2 cup fresh basil leaves, cut into strips
2 tbsp balsamic vinegar
1 tsp honey
2 tbsp extra-virgin olive oil

Combine cabbage, pepper, and basil in large bowl. Whisk vinegar, honey, 1/2 tsp salt, and 1/8 tsp pepper together in small bowl until honey has dissolved. Whisk in oil, pour dressing over cabbage, and toss well. Adjust seasonings with salt and pepper. Serve. Serves 4
