WARM MARINATED OLIVES

Category: Cold

Warming the olives mellows and softens their briny flavor.

1 1/2 cups large, brine-cured green olives with pits
1 1/2 cups large, brine-cured black olives with pits
3 shallots, sliced thin
1/4 cup extra-virgin olive oil
3 cloves garlic, minced
1 tsp grated orange zest
1 tsp minced fresh thyme leaves
1 tsp red pepper flakes
3/4 tsp salt
Pinch cayenne pepper
1 tsp minced rosemary

Set the olives aside after rinsing. Heat the garlic with the oil in a medium saucepan over medium heat until fragrant, about 3 minutes. Stir in the olives and the remaining ingredients. Cook until the olives are warmed through, about 3 minutes. Serve warm. Makes about 3 cups
