FIESTA SLAW

2 tbsp lime juice plus 1/2 tsp grated zest from 1 lime
1 tbsp vegetable oil
1 small clove garlic, minced
1/2 medium jalapeno chili, seeded and minced
4 medium bell peppers, seeded and cut into 1/4-inch strips
1/3 cup minced fresh cilantro

Whisk lime juice, zest, oil, garlic, jalapeno, 1/4 tsp salt, and 1/8 tsp pepper together in large bowl. Add peppers and cilantro and toss well to combine. Adjust seasonings with salt and pepper. Serve. Serves 4 to 6
