Shelly's Recipe

*PASTA WITH CHICKEN*

1 lb green spinach noodles, cooked al dente, drained
1/4 cup olive oil
8 tbsp butter
1 cup finely chopped onion
1 tsp minced garlic
4 boneless, skinless chicken breasts, cubed
1/2 lb zucchini, cubed
4 cups cherry tomatoes
2 tsp salt
Pepper, to taste
1 tsp dried basil and oregano
2 cups shredded Swiss cheese

While pasta is cooking, heat oil and 4 tbsp butter. Saute onion and garlic, stirring, until well browned. Turn down heat and add the chicken. Stir-fry until the chicken is cooked, about 5 minutes. Add the next 6 ingredients. Mix the pasta with the remaining butter and toss with the chicken mixture. Sprinkle with the cheese and serve. Serves 4-6
