TORTELLINI WITH TOMATO-BASIL SAUCE - Easy

2 tsp olive oil
1 large onion, chopped
1 clove garlic, minced
1 (14.5 oz) can Italian-style stewed or chopped tomatoes
Salt and freshly ground black pepper
12 oz frozen cheese tortellini, cooked al dente, drained
1/4 cup fresh basil, chopped
1/4 cup freshly grated Parmesan cheese
While pasta is cooking, in a large skillet, heat oil over medium-high heat. Saute onion and garlic, stirring, until well browned. Add tomatoes and their juice and bring to a boil. Reduce heat to medium-low and simmer, stirring occasionally, until sauce is slightly thickened, 5 to 10 minutes. Season with salt and pepper. Toss pasta with tomato sauce and basil. Adjust seasoning with salt and pepper. Serve immediately, passing the Parmesan. Serves 4-6
