2 cups flour
1 tsp salt
1 tsp baking powder
1 tsp ground cinnamon
1/4 tsp baking soda
1/4 tsp ground cloves
1 cup sugar
1/2 cup butter
2 eggs
2-1/2 cups peeled, shredded apples (2 large)
2/3 cup chopped nuts
1 tsp grated lemon peel
1 tsp vanilla
1 recipe Powdered Sugar Icing (see recipe below)
Preheat oven to 350. Grease a 13x9 inch baking pan. Line with waxed paper. Set aside.
In a medium bowl, stir together flour, salt, baking powder, cinnamon, soda, and cloves.
In a large bowl, beat sugar and butter until well blended. Beat in eggs, one at a time, until combined. Add flour mixture, stirring until well combined. Stir in apples, nuts, lemon peel, and vanilla. Spread mixture in the prepared pan.
Bake for 30 to 35 minutes or until a wooden toothpick inserted near center comes out clean. Remove from oven. Cool on a wire rack for 10 minutes. Loosen edges from pan. Invert onto a wire rack; remove from pan. Peel off waxed paper. Cool. Invert onto a serving platter. Drizzle with Powdered Sugar Icing. Makes 24 servings.
Powdered Sugar Icing: In a small bowl, mix 1 cup sifted powdered sugar, 1 tbsp milk, and 1/4 tsp vanilla. Stir in additional milk, 1 tsp at a time, until drizzling consistency.
