ITALIAN BURGER

1 lb lean ground beef
1/4 cup olive oil and balsamic vinegar
1 small red onion, sliced 1/2 inch thick
12 oz. Portobello Mushroom Caps (about 2-3)
1/4 cup each of Pesto Sauce and Mayonnaise, combined

Form hamburger into patties and grill. Place cheese on hot patty and allow cheese to melt while patty is still on the grill.

Combine olive oil and balsamic vinegar in a small baking pan or dish. Coat both sides of onion slices and mushroom caps with the oil-vinegar mixture. Place onions and mushrooms directly on the grill rack and cook for 3 minutes on each side. Slice mushrooms after removing from grill.

Spread pesto-mayonnaise mixture on each side of bun. Add patty and top with grilled onion and mushroom slices. Top with lettuce and tomato, if desired.
