FETA DIP

1/2 small white onion
1 clove garlic
2 tbsp fresh oregano leaves
Grated zest of one large lemon
1 (10 oz) pkg frozen chopped spinach, thawed and squeezed dry
1/2 cup mayonnaise
1/2 cup sour cream
1/2 cup crumbled feta cheese
1 tbsp fresh lemon juice
1 tsp kosher salt
1/4 tsp freshly ground black pepper
In a food processor fitted with a metal blade, process the onion, garlic, oregano, and lemon zest until finely minced. Add the spinach and pulse several times until finely chopped. Add the mayonnaise, sour cream, feta cheese, lemon juice, salt and pepper. Process just until the dip is well mixed but not pureed smooth. Taste and adjust the seasonings. Transfer to a serving bowl and serve immediately.
Note: This dip can be prepared up to one day in advance. Cover and refrigerate. Remove from the refrigerator 20 minutes before serving.
