STUFFED POTATOES

Category: Twice Baked Potatoes

8 baking potatoes, scrubbed
olive oil
1 bunch scallions, sliced
1 tbsp prepared horseradish
1 tsp dried oregano, Worcestershire sauce and hot sauce
1/8 tsp white pepper
2 cups shredded sharp cheddar cheese

Preheat oven to 425. Coat potatoes with olive oil and bake for 1 hour and 15 minutes. Cut in half lengthwise and scoop out two-thirds pulp and place in a bowl. Put shells under the broiler for 3-5 minutes.

Mix in remaining ingredients except cheese with the pulp and stuff the shells. Bake for 15-20 minutes. After 12 minutes, sprinkle the potatoes with cheese and return to oven for 5 minutes or until cheese melts. Serves 8
