LEMON VELVET CAKE

Cake:
1/2 cup shortening
1/2 tsp lemon extract
2 cup self-rising flour
1 cup sugar
2 eggs
1/2 cup milk
Topping:
1/2 cup butter, melted
1/2 cup chopped nuts
1/2 cup coconut
1 cup brown sugar
1 cup crushed pineapple, well-drained
Preheat oven to 350. Cream sugar and shortening until fluffy. Add lemon extract. Beat in eggs, one at a time (about 2 minutes each time). Add flour and milk alternately, starting and ending with flour. Pour in two greased and wax-paper lined cake pans (bj's note: lightly oil or grease wax paper after putting in greased pan). Bake at 350 30-35 minutes
Prepare topping while cake bakes...Melt butter in saucepan. Add rest and simmer several minutes, until thickens to spreading consistency. Spread between layers and on top.
