PECAN SNACK CAKE

6 egg whites
1 tsp baking powder
1/2 cup sugar
1 tsp vanilla extract
1 1/2 cups reduced-fat graham cracker crumbs
3/4 cup chopped pecans
Dash salt

Preheat the oven to 350. In a medium bowl, beat the egg whites, salt, and baking powder until soft peaks form. Gradually add the sugar, beating until stiff peaks form. Add the vanilla, then fold in the graham cracker crumbs and pecans. Transfer to a pie pan coated with nonstick cooking spray. Bake for 20 to 25 minutes or until done.
