GRUYERE AND ONION TARTLET

19-inch pie shell
1pound Gruyere cheese, sliced
4 each onions, julienned (7 cups)
5 1/2tbsp butter, in all
1 tbsp garlic, minced
2 tbsp chopped thyme and parsley
1 lb bacon, cut in thin strips
1/2 cup flour
1 1/2 cups milk
3 eggs
Pinch nutmeg
Salt and pepper, to taste
Heat 1 1/2 tbsp butter in a heavy-bottom saucepan and add onions and garlic. Cover and cook over low heat for 25 to 30 minutes, stirring occasionally until onions are soft and amber colored. Remove and let cool.
Fry bacon strips until crispy. Add rest of butter and then flour, while whisking to make a roux. Cook 4 to 5 minutes. Slowly whisk in milk. Cook until mixture thickens, remove from heat, fold in eggs, one at a time. Fold in onion mixture, cheese, herbs, salt and pepper, and nutmeg. Fill pie shell, bake 375°F for 30 to 35 minutes. Serves 8
