MARINATED VEGETABLE SALAD

2 carrots, thinly sliced
1 green or red bell pepper, cut into strips
1 cup cauliflower flowerettes
1 1/2 cup sliced mushrooms
2 cups chopped celery
3 green onions, chopped
1/4 cup oil
1/2 cup sugar and vinegar
1 tbsp water

Place vegetables in a resealable bag. Whisk together dressing ingredients and pour over vegetables. Seal and refrigerate overnight. Serves 6
