1 cup chopped onions
1 cup chopped celery
1/2 cup butter
1/2 tsp pepper sauce
1/2 tsp poultry seasoning
Salt
2 tbsp minced parsley
1/4 cup white cooking wine
1/2 cup sliced fresh mushrooms
1/2 cup chopped pecans

Cook onions and celery lightly in butter; stir in seasonings. Place bread cubes and parsley in large bowl; add onion mixture, wine, mushrooms and pecans. Toss lightly to mix. Enough to stuff a 12-pound turkey.
