1/4 cup soy sauce
1/4 cup cream sherry or apple juice
2 tbsp oil and lemon juice
1 tbsp honey
1/4 tsp ground ginger
1 clove garlic, minced
6 boneless, skinless chicken breasts

Topping
1/2 tsp ground ginger
6 thin slices havarti or jack cheese

Mix first 6 ingredients in a resealable bag. Add chicken and coat and marinade at least 1 hour. Remove chicken and reserve marinade. Cover and grill chicken 4 to 6 inches from medium coals 15 to 20 minutes. Brush often with reserved marinade. When done sprinkle with remaining ginger and top with cheese. Serve with cheese melts.
