FLOUNDER WITH SPINACH-RICOTTA FILLING

2 lbs flounder fillets
2 (10 oz) pkg frozen chopped spinach, cooked and drained well
1 cup ricotta cheese
½ tsp basil
2 tbsp butter, melted
2 tbsp flour
¼ tsp salt
Dash pepper
1 cup milk
¼ cup Parmesan cheese
½ cup dry white wine (optional)
1 tsp lemon juice

Arrange half the fillets in greased baking dish. Mix drained spinach, ricotta, and basil in a bowl. Spoon over fillets, then top with remaining fillets.

Blend butter, flour, salt, and pepper in a saucepan. Add milk slowly and cook until thickened, stirring constantly. Add 1/4 cup cheese, wine (optional) and lemon juice. Spoon over top.

Bake at 350 for 20 minutes or until fish flakes easily. Then sprinkle with Parmesan cheese. Broil until lightly browned. Serves 6
