PASTA LUCIA

1 lb bowtie, macaroni or penne, cooked al dente
½ cup olive oil
2-3 cloves garlic, minced
4 oz shrimp, shelled, deveined and cut in half-and-half
1 bunch spinach, trimmed, washed and torn into pieces
1 ripe tomato or 4 plum tomatoes, cut into bite-size pieces
Red and black peppers, to taste
Grated Romano cheese
While pasta is cooking, heat oil in a frying pan. Add minced garlic and sauté 2 minutes. Add shrimp and sauté until pink on one side and flip over. Add spinach and sauté 1 minute. Add tomato and sauté 1 minute. When pasta I cooked, drain well and add to the skillet.
