SWEET AND SOUR WINGS I

3 lbs chicken wings, tips removed and cut at the joints
1 tsp salt
Vegetable oil, enough for deep frying
1 cup cornstarch
3 eggs, beaten
1/4 cup soy sauce
1/2 cup vinegar and sugar
3 tbsp sugar
3 tbsp ketchup
1/2 tsp salt
1/2 cup apple jelly
2 tbsp lemon juice
Rinse and pat dry wings. Sprinkle with salt. Heat oil in fryer to 375.
Roll wings in cornstarch and then dip in egg to coat evenly. Deep fry 4-6 pieces at a time, until lightly brown, about 5 minutes. Drain on paper towels. Place in a shallow baking pan.
Combine soy sauce and remaining ingredients in a small pan and heat to boiling, stirring constantly. Lower heat, simmer for 10 minutes. Pour over chicken and bake at 350 for 30 minutes until glazed, basting about every 10 minutes.
