BARBECUE BAKED CHICKEN WINGS

2 lbs chicken wings, separated

Sauce
2 tbsp olive oil 1 onion, finely chopped
3 clove garlic, minced
1 cup water
1/2 cup tomato paste
3 tbsp red wine vinegar
2 tbsp Dijon mustard
2 tbsp packed brown sugar
1/2 tsp salt
1/4 tsp black pepper
Dash cayenne pepper

Heat the oil in a saucepan and cook onions and garlic, stirring, for 10 minutes or until soft. Add remaining ingredients and simmer for 20 minutes. Let sauce cool.

Toss wings with sauce to coat. Cover and refrigerate for 1 hour. Place wings on a rack in a broiler pan and bake at 450 for 40-45 minutes, brushings occasionally with more sauce.

NOTE: These are also good cooked on the grill using indirect heat.
