CHOCOLATE MACADAMIA COOKIES WITH WHITE CHOCOLATE CHUNKS

¾ cup firmly packed brown sugar
½ cup sugar
1 cup butter, softened
1 tbsp almond extract
1 egg
2 cups flour
¼ cup unsweetened cocoa
1 tsp baking soda
½ tsp salt
6 oz white chocolate bar -- cut into chunks OR vanilla chips
3 1/2 ounces macadamia nuts -- coarsely chopped
Heat oven to 375. In a large bowl, combine brown sugar, sugar, and butter. Beat until light and fluffy. Add almond extract and egg; blend well. Add flour, cocoa, baking soda and salt; mix well. Stir in white chocolate and nuts. Drop by rounded tablespoonfuls 2" apart onto ungreased cookie sheets. Bake for 8-12 minutes or until set. Cool 1 minute; remove from cookie sheets.
