CHICKEN WINGS

3 lbs chicken wings
2 tbsp salad oil
1/2 cup soy sauce
2/3 cup medium or dry sherry
1/4 cup ketchup
2 tbsp sugar
1/2 tsp ground ginger

In a Dutch oven, cook wings over high heat in hot oil, stirring constantly, for a bout 7 minutes. Reduce heat to medium and add remaining ingredients, stirring to blend. Cover and cook about 25 minutes, stirring occasionally.

Uncover and cook 10 minutes longer, stirring frequently, until all liquid si absorbed and wings are tender. Serve warm.
