APPETIZER TUNA SPREAD

4 cloves garlic, peeled
4 (6 oz) cans tuna, drained
1/4 cup and 2 tbsp capers, drained (reserve brine) and rinsed
2 (8 oz) pkg cream cheese, softened
1/4 cup fresh lemon juice
2 tbsp olive oil
Chopped green onion tops
Crackers

In a food processor fitted with the metal blade or in a blender, process garlic until minced. Add tuna, 3 tbsp of the capers, 1 tsp brine from capers, cream cheese, lemon juice, and olive oil. Process until smooth. Spoon mixture into a crock or serving bowl. Cover and refrigerate until serving. Before serving, garnish top with a ring of extra capers and green onions. Spread on crackers.
