Australian Crispy Parmesan Potatoes

1 medium potato per person

2 teaspoons oil per potato

salt, pepper, onion powder and garlic seasoning

Kraft parmesan cheese

Preheat oven to 375 degrees.

Peel potatoes early in the day and immerse in water until you are ready to cook them. Trim to a smooth, rounded shape. Cut a thin slice from the base of each potato so they sit flat. Using a sharp knife, carefully make cuts about 1/4 inch apart across the top of the potato; cut from the top of the potato ALMOST through to the base.

Place potatoes flat side down in a large baking dish. Brush well with oil and sprinkle with seasonings . Bake for 40 minutes. Brush occasionally with oil during cooking time.

Remove potatoes from oven, sprinkle liberally with the Parmesan cheese; bake another 20 minutes until potatoes are crisp on the outside and tender inside. DO not turn potatoes during baking.
