BLUE CHEESE TOPPING

2 cups crumbled blue cheese
½ cups chopped red onions
¼ cup chopped parsley
1/3 cup olive oil
3 tbsp red wine vinegar
2 cloves garlic, minced
½ tsp pepper

In a pie plate, sprinkle blue cheese in an even layer. Top with onions and parsley. In a small bowl, combine remaining ingredients and mix well. Pour over blue cheese mixture. Cover and chill for at least 1 hour before serving.

Serving Tips: Using as a chunky dressing, as a topper for burgers, steaks or top crusty bread, crackers and apple and pear slices.
