BOURBON APPLE CAKE

1 cup vegetable oil
3 eggs
2 cups sugar
3 cups flour
1/2 tsp salt
1 tsp baking soda
2 tsp baking powder
1 tbsp cinnamon
3 cups apples, peeled and chopped
1/4 cup bourbon
1/2 cup walnuts or pecans, chopped

Glaze
1 cup brown sugar, packed
1 tbsp evaporated milk
2 tbsp butter

Preheat oven to 350. Mix oil, eggs and sugar and beat until creamy. Sift dry ingredients and add to mixture. Add apples, bourbon and nuts. Mix well. Bake in a greased and floured tube pan for 1 hour and 20 minutes or until toothpick inserted into center comes out clean.

Combine all Glaze ingredients in a saucepan. Bring to a boil and cook, stirring constantly for 2 minutes. Drizzle over cake.
