BAKED ITALIAN CHICKEN

4 boneless, skinless chicken breasts
1 cup Italian bread crumbs
3 eggs, one at a time, beating after each addition 2 tbsp capers
4 thin slices Monterey jack cheese
4 strips prosciutto
Dash oregano
Salt and pepper, to taste

Preheat oven to 375. In a large bowl, whip eggs, oregano, capers, salt and pepper. Set aside. Pound chicken until very thin. Dip into egg mixture to evenly coat and the dip into bread crumbs until evenly coated. Set on a foil covered cookie sheet. Place 1 slice of prosciutto on top of each breast and bake for 15 minutes, Serves 4
