ITALIAN CHICKEN BAKE OVER ANGEL HAIR PASTA

4 boneless, skinless chicken breasts
1/4 lb sweet Italian sausage
1 large onion, thinly sliced
1/2 cup sliced celery
1/2 cup green and red bell pepper, chopped
1/4 cup carrots, peeled and sliced
1 (4 oz) can sliced mushrooms
1 (16 oz) can tomatoes, undrained and cut into quarters
2 bay leaves
1 tsp dried basil and oregano
2 tbsp grated parmesan cheese
1 clove garlic, minced or 1/2 tsp garlic powder
1/4 tsp pepper

Shredded mozzarella cheese, for topping
8 oz angel hair pasta, cooked al dente, drained

Preheat oven to 350. Place chicken in a baking pan; set aside. Brown sausage in a skillet, stirring to crumble; remove and drain. Discard all but 2 tbsp sausage drippings in skillet and saute vegetable until tender, but not browned. Drain.

Add remaining ingredients except pasta and add to cook sausage. Stir to combine and pour over chicken. Cover with foil and bake for 45 minutes. Remove from bay leaf. Sprinkle with mozzarella cheese and return to oven and bake, uncovered, for 10 minutes to melt cheese. Serve over angel hair pasta. Serves 4
