COCONUT KISSES

1 (3 1/2 oz) can flaked coconut, toasted and cooled
2 egg whites
Pinch salt
4-6 drops almond extract
Milk chocolate kisses or chocolate chunks

Preheat oven to 275. Lightly grease and flour a baking sheet. Beat egg whites and salt to soft peaks; add sugar a tsp at a time. Then add extract; beat until stiff.

Crush toasted coconut with hands. Add to meringue. Place slight rounded tspfuls on baking sheet, 2 inch apart. Set chocolate on each mound and press slightly. Add a small dollop of dough to cover chocolate. Bake for 30 minutes. Cool on cookie sheet for 20 minutes before remove to wire racks to cool completely.
