POTATOES SOUFFLE

2 2/3 cup mashed potato mix
1 egg, beaten
1 can French-fried onion rings
1/4 tsp salt
1/2 cup shredded cheddar cheese

Prepare potatoes according to package directions. Add next 3 ingredients, stirring until blended. Spoon mixture into a lightly greased 2-quart baking dish; sprinkle with cheese. Bake, uncovered, at 350 for 5 minutes or until cheese melts. NOTE: Can microwave on high for 4-5 minutes. Sprinkle with cheese; cover and let stand 2 minutes or until cheese melts.
