4 medium potatoes
1 tsp salt
3 tbsp melted butter
1 tbsp chopped parsley, chives, thyme and sage
4 tbsp grated cheddar cheese
2 tbsp grated parmesan cheese

Preheat oven to 425. Scrub and rinse potatoes; cut 1/8 inch slices vertically into the potato (not all the way through, the bottom should still be intact.) Put the potatoes in a baking dish. Fan the slices slightly. Sprinkle with salt and drizzle with butter.

Combine herbs and sprinkle over potatoes. Bake, uncovered, for about 50 minutes. Remove from oven, sprinkle with cheeses and return to oven for another 15 minutes until cheese is melted and potatoes are lightly browned. Serves 4
