DOUBLE STUFFED BAKED POTATOES WITH CHEESE AND BACON

Category: Twice Baked Potatoes

4 large baking potatoes
4 tbsp olive oil
1 cup sharp cheddar cheese, finely grated
1/2 cup sour cream
4 slices smoked bacon, cooked until crisp and crumbled
2 scallions, minced
1/2 - 1 tsp hot sauce

Wash potatoes, dry off and rub potato skins with olive oil. bake in the oven at 400 for 1 hour. Allow to cool slightly. . Cut in half lengthwise. Carefully scoop potato out of each half to within 1/4 inch of skin, placing skins in a baking dish.

In a bowl, combine inside of potatoes, and remaining ingredients. Place shells on a baking dish and mound cheese mixture in them. Bake until cheese is melted, about 15 minutes. Serves
