DELMONICO POTATOES

5 large potatoes, boiled in jackets, leave a little hard
2 tsp parsley and salt, divided
1/2 tsp pepper, divided
2 tbsp minced onion, divided
2/3 stick butter, divided
1 (16 oz) container sour cream
1 1/2 cups milk
1 cup shredded Velveeta
Boil potatoes and refrigerate overnight. Great 2 1/2 potatoes for first layer. In a small bowl, mix 1 tsp parsley and salt, 1/4 tsp pepper, 1 tbsp onion and 1/3 stick butter. Sprinkle over grated potatoes. Mix together sour cream and milk and pour halve over potatoes. Top with 1/2 cup cheese. Repeat layers. (Can be frozen at this point; thaw COMPLETELY before baking.) Bake at 350 for 1 hour.
