CHEESY POTATOES

6 medium potatoes
1 onion, sliced
1/4 tsp dried parsley
1 cup shredded cheddar cheese
1/4 tsp salt and pepper
1/4 cup butter

Slice potatoes very thin. Place 1/2 inch in a casserole dish sprayed with cooking spray. Add 1 layer onion slices, sprinkle with half the dried parsley, half the salt and pepper. Add 1/2 cup cheese and top with half the butter. Repeat layering. Cover and cook 15 minutes or until potatoes are tender.
