SHRIMP AND ASPARABUS RICE BOWL

1 cup long grain rice
1 lb fresh asparagus, trimmed and cut into 1 1/2 inch pieces
2 tbsp butter
1 1/2 lb shrimp, peeled and deveined
2 clove garlic, finely chopped
1 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
Cook rice according to package directions. Reserve. Heat 1 tbsp butter in a skillet and add asparagus to stir-fry for 3 minutes. Remove from skillet. Reserve.
Add remaining butter to skillet and add shrimp, stir-fry for 2 minutes. Stir in garlic; stir-fry 1 minute more. Stir in remaining ingredients and add asparagus and rice into skillet. Heat to warm up. Serves 6
