FLOUNDER STUFFED WITH CRABMEAT

Nonstick cooking spray
2 tsp olive oil
1/4 onion, peeled, diced very fine
1/2 celery stalk, diced very fine
2 cloves garlic, minced
2 tbsp chopped fresh parsley
6 ounces crabmeat (fresh, frozen or canned, drained)
1/4 cup breadcrumbs
1 lb flounder fillets
1/3 cup mayonnaise
2 tbsp lemon juice
2 tsp Mrs. Dash (or lemon pepper) seasoning
1/2 lemon, cut into 4 wedges

Spray large nonstick skillet with cooking spray. Add oil and heat over medium heat. Add onion, celery and garlic and cook until onion is tender, about 3-4 minutes. Add parsley, crabmeat and breadcrumbs and mix well. Remove from heat and set aside.

Preheat broiler. Wash fish under cold running water; pat dry. Lay fillets out on broiler pan; place large spoonful of stuffing in center of each. Roll up and secure with toothpick, placing open end down.

In small mixing bowl, combine mayonnaise, lemon juice and Mrs. Dash. Brush top of each fillet with mixture. Broil, 6 inches from heat, until fish is done and flakes easily to fork, about 7 minutes. Serve immediately, garnished with lemon wedges. Serves 4
